Anybody tried turning bamboo on a wood lathe?

I have an idea to turn bamboo to a true cylinder on a wood lathe, but I'm wondering how to fix between centres?

Not a great idea.
I suggest you take a saw to a piece of bamboo and then an ax and try cutting. You will find (at least in my experience) that bamboo has an indentation on one side of the "cylinder" that is indented from 0.5 to 1.0 the wall thickness. And the strength of bamboo is from long fibers that run lengthwise that you will be trying to cut sideways.
The most obvious way to fix it between centers if you want to try is to carve a softwood plug to press fit open ends (away from the joint/knuckle) to fill the space. Use shims on the jaws to center.
