What is the best way to go about publishing a book of original patterns for knitting?
The first thing you do is research your market. You should know how many people in America knit, and how much money a year this industry generates. This will help you prove there is room for your book in a 'booming' market. Agents/Editors want to know that your book will do well and, in fact, NEEDS to be on shelves.
Then you research how to put together a "Non-Fiction Proposal." Non-fiction books almost always sell on proposal, which is like a table of contents, a sample chapter, an outline, etc. You dont put together the whole book.
Next, you either check the 2006 Writer's Market book, or you go to www.Agentquery.com. Run a search for agents who accept non-fiction clients. Then, use the links (if any) to research the agents. You want an agent who does not charge any upfront fees (they make their money ONLY if it sells) and who has previous non-fiction sales.
Then, research how to write a good query letter. Then you query agents-- LOTS of them. Try ten at first, then when/if you get a rejection, you send out a replacement. So you always have ten "chances' to succeed. Include in this query your industry research.
Last, you sign with an agent, and he/she gets you a publishing deal.
