Ice Cream Sundae Potato Bar Ideas?

I am having an ice cream sundae potato bar for the Fourth of July. I need help coming up with toppings. I am rolling vanilla ice cream in tinfoil as the potato.

Hot Fudge = Gravy
Coconut dyed green = Chives
Chopped nuts = Bacon bits
White chocolate melted in molds to look like pats of butter
Whipped cream = Sour cream
Chopped strawberries = chopped tomatoes

What can I use for cheese? I can't think of anything, but I have had this before and I know they had "cheese". Any other ideas?

That is so clever!
For "chili" you could use chopped nuts in syrup (like they have at ice cream shops).
For "cheese" you could use orange sprinkles???
Or even Butterfinger pieces.
